The GREAT Program is supported by indiviudals trained in GREAT, in addition to being professionals in the Gluten Free Community. They are independent consultants who are committed to training kitchens and their workers in a gluten free kitchen protocol.
GREAT Dietitians: Dietitians are invited to add to their skill base and become experts in gluten-free kitchen protocols. A gluten free product is only as good as the process it takes to get to the mouth of the person on a gluten free diet. This "Train the trainer" program gives dietitians the ability to hold seminars, train other dietitians, and help kitchens set up a gluten free menu.

Joan Pedlow RN, RD - Joan is a highly qualified individual who lives the gluten-free life. She is already a developer of gluten free foods, an on staff gluten-free consultant for a national food line, a certified restaurant educator, and dietician/ nurse.
Linda Cardninal RD - Linda Cardinal is a registered dietitian passionate in helping those with Celiac disease live a healthy life away from gluten. In addition she seeks to increase Celiac Disease awareness across the United States. Personally, she lives a gluten-free diet related to a gluten-intolerance, not celiac disease. She has a background in food-service and especially loves to bake and cook gluten-free.

You can broaden your expertise and expand your credentials by incorporating the GREAT Program into your consulting portfolio.
While the program can stand on its own, some venues will seek additional support. The GREAT Kitchen Program, developed in cooperation with the NFCA, is based on distance learning and online review. The need may arise for additional support in implementing the protocol suggesting the use of qualified instructors for specific, tailored on-site training.
Because you are an independent professional in a position to conduct training in the gluten-free lifestyle, we will refer these cases to you. Your role will be determined by your specialty, style, and business practices. Just as a teacher uses the term "Suzuki Piano" or "Pilates" exercise, you will utilize this program as a guide but make it shine according to your individual talents while adhering to the GREAT principles, especially a cost and time effective presentation.
Our goal is to place materials, customers, and encouragement in your hands. You already have training and experience that has brought you to this point. Utilizing the GREAT Kitchen program will give us a common language and shared resources.
Most of those in the GREAT Kitchen Program are doing so through independent learning. However, we are already getting many requests for specific types of locations wanting quick, professional, and affordable assistance. For comprehensive, logistical management in this process, we will refer customers to another program. However, we believe for most cases a GREAT Guide could be the most effective way to educate the kitchen.
