The GREAT Program provides an educational model for building awareness. By presenting lessons for both adults and children, The GREAT Program hopes that those on a gluten-free diet will be effectively supported in as uncomplicated of a process as possible.

  • GREAT Kitchen: The Celiac Site, in cooperation with the National Foundation for Celiac Awareness, offers a gluten-free kitchen protocol training program for chefs, kitchen operators, and restaurateurs who would like to correctly serve gluten free food to their customers. Kitchens become verified through a distance learning program. The goal of the GREAT Program is to provide widespread gluten-free education for those in the restaurant and the hospitality industries, including school and health care facilities. Educated kitchens will lead to greater assurance in the gluten-free community.   In an effort to prevent such education as being perceived as cost or time prohibitive, every effort has been made to make comprehensive materials available at an affordable price with a manageable time commitment.  Kitchens become verified, using differing levels of support, beginning with a distance learning program. GREAT CHEFS is the individual counterpart to this program. 
  • GREAT Dietitians:  Dietitians and others trained in medical nutritional therapy are excellent resources for the gluten-free community.  Utilizing existent training, Dietitians can take utilize the program to help in their profession in either a clientele or institutional setting.  This program is not a lesson in the clinical manifestations of Celiac Disease nor a list of products, but a tool bag to find resources and prevent cross contamination in any kitchen. GREAT Dietictians is also a "Train the Trainer" program, whereas dietitians can take the GREAT Guide Program in addition to the Dietitians program and help in educating the greater comunity about gluten-free kitchen protocols.  (This program has been preapproved by the CDR for CPEUs for members of the ADA)
  • GREAT Guides GREAT Guides are leaders in the gluten-free community, including dietitians, who help in the implementation of the GREAT Program.  Guides are trained in the GREAT materials and in training techniques.  Guides take the Kitchens program in addtion to the Guide and or Dietitian program, pass an online examination, and prepare a training program.  Guides are referred to kitchens and for seminars.  (This program has been preapproved by the CDR for CPEUs for members of the ADA)
  • GREAT Kids:  Lesson plans, Science Fair Projects, Literature Links and more for kids on a gluten-free diet.
